Ingredients:
- 2 cups (500 ml) heavy cream or double cream
- A pinch of salt (optional)
- Ice water (for washing)
Equipment:
- Stand mixer, hand mixer, or jar with a tight lid
- Fine mesh strainer or cheesecloth
- Bowl
Instructions:
- Pour the cream into a bowl or jar and whip on medium-high speed. First, it becomes whipped cream. Keep going!
- After a few minutes, it will separate into yellow butter solids and milky buttermilk.
- Drain the buttermilk - you can save it for pancakes or baking if you like!
- Wash the Butter by placing the butter in a bowl, add ice water and knead gently. Repeat until the water is clear.
- Add Salt (Optional) by kneading in a pinch for flavour.
- Form the butter into a block and store in your butter dish in the fridge up to a week, or freeze for longer.
